
Malaysian Satay Skewers
Tender grilled meat skewers with spicy peanut dipping sauce

Prepare the marinadeIn a large bowl, combine the vegetable oil, minced lemongrass, garlic, ground coriander, turmeric, brown sugar, ground cumin, and salt. Mix well to form a smooth paste.

Marinate the meatAdd the cubed meat to the marinade and toss to coat evenly. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, preferably overnight, to allow the flavors to penetrate the meat.

Prepare the peanut sauceIn a saucepan over medium heat, combine the ground peanuts, tamarind paste or lime juice, palm sugar, sambal oelek, and coconut milk. Stir continuously until the mixture thickens, about 5-7 minutes. If the sauce is too thick, add a little water to reach desired consistency. Remove from heat and set aside.

Skewer the meatThread the marinated meat onto the pre-soaked bamboo skewers, using 4-5 pieces per skewer. Leave a small space at the bottom of each skewer to use as a handle.

Grill the satayPreheat a grill or grill pan to medium-high heat. Place the skewers on the grill and cook for 3-4 minutes per side, or until the meat is fully cooked and slightly charred on the edges. Baste with any remaining marinade while grilling for extra flavor.

Serve with peanut sauceArrange the grilled satay skewers on a serving platter and serve hot with the peanut dipping sauce on the side. Garnish with sliced cucumber, red onions, and fresh cilantro if desired.
