
Malaysian Peanut Satay
Grilled skewers with aromatic peanut dipping sauce

Prepare the marinadeIn a large bowl, combine vegetable oil, lemongrass, garlic, ginger, brown sugar, turmeric, coriander, cumin, and soy sauce. Mix well to form a paste-like marinade.

Marinate the meatAdd the cubed meat to the marinade, ensuring each piece is well coated. Cover and refrigerate for at least 2 hours, preferably overnight for the best flavor development.

Prepare the peanut sauceIn a saucepan over medium heat, combine chopped peanuts, tamarind paste, coconut milk, and chopped chilies. Bring to a simmer and cook for 10-15 minutes, stirring occasionally until the sauce thickens. If too thick, add a little water. Set aside to cool slightly.

Skewer the meatThread the marinated meat onto the pre-soaked bamboo skewers, using 4-5 pieces per skewer. Leave a small space between each piece to ensure even cooking.

Preheat the grillPrepare a charcoal or gas grill for direct cooking over medium-high heat (approximately 375-400°F or 190-200°C). If using a charcoal grill, wait until the coals are glowing red with a light coating of white ash.

Grill the satayPlace the skewers on the preheated grill and cook for 3-4 minutes per side, or until the meat is thoroughly cooked and has nice grill marks. Be careful not to overcook as the meat can become dry.

ServeTransfer the satay skewers to a serving plate and serve hot with the peanut sauce for dipping. Garnish with fresh cilantro and lime wedges if desired.
