
Lobster Tacos with Avocado Salsa

Prepare the lobsterBring a large pot of salted water to a boil. Add lobster tails and cook for 5-6 minutes until just cooked through. Remove, let cool slightly, then remove meat from shells and chop into bite-sized pieces.

Make the avocado salsaIn a medium bowl, combine the diced avocados, red onion, tomatoes, jalapeño, cilantro, and 1 tablespoon of lime juice. Season with salt and pepper to taste. Gently toss to combine and set aside.

Season the lobsterIn a bowl, mix the lobster meat with olive oil, garlic, cumin, smoked paprika, remaining lime juice, and salt and pepper. Let marinate for 5 minutes to absorb the flavors.

Cook the seasoned lobsterHeat a skillet over medium-high heat. Add the marinated lobster and sauté for 2-3 minutes until just heated through. Be careful not to overcook as lobster can become tough.

Warm the tortillasHeat tortillas in a dry skillet or directly over a gas flame for about 30 seconds per side until warm and slightly charred. Keep warm in a clean kitchen towel.

Assemble the tacosPlace a spoonful of the sautéed lobster onto each warm tortilla. Top with a generous amount of avocado salsa and a drizzle of Mexican crema or sour cream.
