  1. Cook the quinoa
    In a medium saucepan, combine the rinsed quinoa and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes until the liquid is absorbed and the quinoa is tender. Remove from heat and let stand, covered, for 5 minutes.
  2. Prepare the dressing
    While the quinoa is cooking, in a small bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, salt, and pepper until well combined.
  3. Fluff and season
    Fluff the cooked quinoa with a fork and transfer to a large mixing bowl. While the quinoa is still warm, pour the lemon dressing over it and gently toss to combine. The warm quinoa will absorb the flavors better.
  4. Add fresh ingredients
    Allow the quinoa to cool to room temperature, about 10 minutes. Then add the chopped parsley, mint, chives, diced cucumber, cherry tomatoes, and red onion. Fold gently to combine all ingredients evenly.
  5. Final touches
    If using, fold in the crumbled feta cheese. Taste and adjust seasoning with additional salt, pepper, or lemon juice if needed. For the best flavor, let the salad sit for about 15 minutes before serving to allow the flavors to meld together.
  6. Serve and garnish
    Transfer the quinoa to a serving bowl or individual plates. Garnish with additional fresh herbs and a lemon wedge for an extra pop of color and flavor. Serve at room temperature for the best taste.
