  1. Prepare the meat mixture
    In a large bowl, combine the ground beef, minced onion, garlic, parsley, mint, cumin, coriander, allspice, cinnamon, cayenne (if using), salt, and black pepper. Mix thoroughly with your hands until all ingredients are well incorporated, but avoid overworking the meat.
  2. Test the seasoning
    Heat a small pan over medium heat and cook a small patty of the meat mixture for 2-3 minutes. Taste and adjust seasonings if necessary before proceeding with the rest of the mixture.
  3. Form the kofta
    Divide the meat mixture into equal portions. Take each portion and shape it around a skewer, forming an elongated sausage shape about 1 inch thick and 4-5 inches long. Use wet hands to prevent sticking and ensure a smooth finish. Press the meat firmly around the skewer to prevent it from falling off during cooking.
  4. Refrigerate
    Place the prepared kofta skewers on a tray and refrigerate for at least 30 minutes (or up to 4 hours) to allow the flavors to meld and the meat to firm up.
  5. Prepare the grill
    Preheat a grill or grill pan to medium-high heat. Brush the grates lightly with oil to prevent sticking.
  6. Cook the kofta
    Brush the kofta skewers lightly with olive oil. Grill the skewers for 3-4 minutes on each side, turning carefully, until they are browned on the outside and reach an internal temperature of 160°F (71°C). Avoid overcooking to prevent the meat from becoming dry.
  7. Rest and serve
    Remove the kofta from the grill and let them rest for 3-5 minutes. Serve hot with warm pita bread, fresh vegetables, tahini sauce, or yogurt sauce. Garnish with additional chopped parsley and lemon wedges if desired.
