  1. Prepare the papaya
    Peel the green papaya and remove all seeds. Using a papaya shredder or sharp knife, shred the papaya into thin, long strips. Soak in cold water for 5 minutes, then drain thoroughly and pat dry.
  2. Create the dressing base
    In a large mortar and pestle, pound the garlic and chilies until they form a rough paste. Add the palm sugar, fish sauce, lime juice, and tamarind paste, then pound lightly to combine all flavors.
  3. Add vegetables
    Add the long beans to the mortar and lightly bruise them with the pestle. Add the tomato wedges and continue to pound gently, just enough to release juices without completely crushing the vegetables.
  4. Mix with papaya
    Add the shredded papaya to the mortar (or transfer everything to a large bowl if your mortar is small). Using a spoon and the pestle, toss everything together while applying slight pressure to help the papaya absorb the flavors.
  5. Add final ingredients
    If using, add the dried shrimp and crab paste and mix well. Taste and adjust the seasoning with more fish sauce, lime juice, or sugar according to your preference for salty, sour, or sweet flavors.
  6. Serve
    Transfer to a serving plate, sprinkle with crushed peanuts, and serve immediately alongside sticky rice and grilled meats for an authentic Laotian meal experience.
