  1. Marinate the beef
    In a medium bowl, combine soy sauce, brown sugar, sesame oil, minced garlic, and grated ginger. Add the thinly sliced beef and toss to coat thoroughly. Allow to marinate for at least 20 minutes, or refrigerate for up to 24 hours for deeper flavor.
  2. Prepare the gochujang sauce
    In a small bowl, mix together the gochujang and mayonnaise until smooth. This creates a creamy, spicy sauce that will add moisture and heat to the burritos. Set aside.
  3. Cook the bulgogi
    Heat a large skillet over high heat. Working in batches to avoid overcrowding, cook the marinated beef for 2-3 minutes until browned and slightly caramelized. The thin slices will cook quickly, so keep a close eye on them. Transfer cooked beef to a plate and continue until all meat is cooked.
  4. Warm the tortillas
    Heat the flour tortillas in a dry skillet for about 10 seconds on each side, or wrap them in damp paper towels and microwave for 30 seconds until warm and pliable.
  5. Assemble the burritos
    Lay a warm tortilla flat on your work surface. Spread about 1 tablespoon of the gochujang-mayo sauce in the center. Add 1/2 cup of rice, followed by a portion of the bulgogi beef. Top with chopped kimchi, shredded carrots, and cucumber slices.
  6. Roll the burritos
    Fold in the sides of the tortilla, then roll from the bottom up, tucking in the filling as you go to create a tight cylinder. For extra security, you can wrap the bottom half in foil or parchment paper to help hold it together while eating.
  7. Garnish and serve
    Cut the burritos in half diagonally if desired, and garnish with sliced green onions and a sprinkle of toasted sesame seeds. Serve immediately with additional gochujang sauce on the side for dipping.
