
Kenyan Pilau
Fragrant East African spiced rice with tender meat

Brown the meatHeat the oil in a large, heavy-bottomed pot over medium-high heat. Add the meat and brown on all sides, about 5-7 minutes. Remove the meat and set aside.

Caramelize the onionsIn the same pot, add the sliced onions and cook until they turn a deep golden brown, about 10-12 minutes. This caramelization is crucial for the signature color and flavor of Kenyan pilau.

Add aromaticsAdd the minced garlic, grated ginger, pilau masala, cinnamon sticks, and cardamom pods. Stir continuously for 1-2 minutes until fragrant, being careful not to burn the spices.

Return meat and add liquidsReturn the browned meat to the pot. Add the tomato paste and stir well to coat the meat. Pour in the beef or chicken broth and bring to a boil. Add salt to taste.

Add rice and potatoesDrain the soaked rice and add it to the pot. If using potatoes, add them at this stage. Stir gently to ensure the rice is evenly distributed. The liquid should be about 1 inch above the rice.

Simmer until cookedReduce heat to low, cover the pot tightly, and simmer for about 20-25 minutes, or until the rice is tender and has absorbed all the liquid. Avoid stirring during this time to prevent the rice from becoming mushy.

Rest and fluffOnce cooked, remove from heat and let the pilau rest, covered, for 5-10 minutes. This allows the flavors to settle and the rice to become perfectly fluffy.

ServeGently fluff the rice with a fork, removing the cinnamon sticks and cardamom pods if desired. Garnish with fresh cilantro leaves and serve hot with kachumbari (Kenyan tomato and onion salad) or a side of fresh vegetables.
