  1. Prepare the kale
    Place the torn kale leaves in a large bowl. Drizzle with olive oil and sprinkle with salt. Using your hands, massage the kale for 2-3 minutes until it becomes darker in color and more tender.
  2. Add vegetables
    Add the sliced red bell pepper, julienned carrot, shredded cabbage, and green onions to the bowl with the massaged kale. Toss to combine.
  3. Make the peanut dressing
    In a small bowl, whisk together the peanut butter, soy sauce, rice vinegar, honey, lime juice, grated ginger, and red pepper flakes (if using). If the dressing is too thick, add 1-2 tablespoons of warm water to thin it to your desired consistency.
  4. Dress the salad
    Pour the peanut dressing over the kale and vegetables. Toss thoroughly to ensure all ingredients are well coated with the dressing.
  5. Add the peanuts
    Add the chopped peanuts to the salad and toss again to incorporate. Reserve some peanuts for garnishing if desired.
  6. Serve and garnish
