  1. Prepare the aromatics
    Bruise the lemongrass using the back of a knife, then cut into 2-inch pieces. Slice the galangal and tear the kaffir lime leaves. These will infuse the curry with essential flavors.
  2. Create the curry base
    Heat vegetable oil in a large pot over medium heat. Add the curry paste and stir-fry for 2-3 minutes until fragrant and the oil begins to separate from the paste. This process releases the essential oils and flavors from the spices.
  3. Cook the chicken
    Add the chicken pieces to the pot and stir to coat with the curry paste. Cook for about 5 minutes until the chicken begins to brown on all sides. The chicken will finish cooking in the broth.
  4. Add the liquid and aromatics
    Pour in the chicken stock, then add the lemongrass, galangal, and kaffir lime leaves. Bring to a boil, then reduce to a simmer. Add the fish sauce and palm sugar, stirring to combine. Let the mixture simmer for 10 minutes to develop the flavors.
  5. Cook the vegetables
    Add the Thai eggplants and cook for 5 minutes, then add the red bell pepper and green beans. Continue to simmer for another 5-7 minutes until all the vegetables are tender but still maintain their texture and color.
  6. Final seasoning
    Taste the curry and adjust the seasoning as needed with more fish sauce for saltiness or palm sugar for sweetness. The curry should have a good balance of spicy, salty, and slightly sweet flavors with a predominant heat.
  7. Serve the curry
    Remove from heat and stir in the Thai basil leaves and sliced bird's eye chilis. Serve hot with steamed jasmine rice. For authentic Thai style, the curry should be quite spicy and aromatic.
