  1. Prepare the vegetables
    Finely dice the onion, carrots, and bell pepper. Mince the garlic and grate the ginger. Having all ingredients ready before cooking will make the process smoother.
  2. Brown the beef
    Heat a large skillet or wok over medium-high heat. Add the ground beef and cook until browned, breaking it up into small pieces. Drain excess fat if necessary, leaving about 1 tablespoon in the pan.
  3. Sauté the aromatics
    Add the diced onion to the beef and cook until translucent, about 3-4 minutes. Add the garlic and ginger, and sauté for another minute until fragrant.
  4. Add vegetables
    Add the diced carrots and bell pepper to the skillet. Stir-fry for about 5 minutes until the vegetables begin to soften.
  5. Incorporate the spices
    Add the curry powder and garam masala to the skillet. Stir continuously for 1-2 minutes to toast the spices and coat the meat and vegetables evenly.
  6. Add remaining seasonings
    Stir in the tomato paste, soy sauce, and honey or sugar. Mix well to combine all the flavors. Add the green peas and cook for another 2-3 minutes. Season with salt and pepper to taste.
  7. Serve the curry
    Serve the dry curry over hot steamed Japanese rice. For an authentic Japanese presentation, pack the rice into a small bowl and invert onto a plate, then spoon the curry beside or over the rice.
