
Italian Sausage and Peppers
Juicy sausages with sweet bell peppers in a savory tomato sauce

Brown the sausagesHeat 1 tablespoon of olive oil in a large, deep skillet or Dutch oven over medium-high heat. Add the sausages and brown on all sides, about 8-10 minutes. They don't need to be fully cooked at this point. Transfer to a plate and set aside.

Sauté the vegetablesIn the same pan, add the remaining tablespoon of olive oil. Add the sliced onions and cook for 3-4 minutes until they begin to soften. Add the bell peppers and continue cooking for 5-6 minutes, stirring occasionally, until peppers begin to soften but still maintain some crispness.

Add aromatics and liquidsStir in the sliced garlic and cook for 1 minute until fragrant. Add the red wine if using, scraping up any browned bits from the bottom of the pan. Add the diced tomatoes with their juices, dried oregano, dried basil, and red pepper flakes. Season with salt and pepper to taste.

Simmer with sausagesSlice the browned sausages into 1-inch pieces and add them back to the pan. Stir to combine with the pepper mixture, then reduce heat to low. Cover and simmer for 15-20 minutes, stirring occasionally, until the sausages are cooked through and the flavors have melded together.

Adjust seasoning and serveTaste and adjust the seasoning as needed. Remove from heat, garnish with torn fresh basil leaves. Serve hot in hoagie rolls for sandwiches or over polenta, pasta, or rice as a main dish.
