
Italian Pasta Primavera
Fresh spring vegetables tossed with pasta in a light cream sauce

Cook the pastaBring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente, typically 8-10 minutes. Reserve 1 cup of pasta water before draining.

Prepare the vegetablesWhile the pasta is cooking, heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add the bell peppers and asparagus, cooking for 3 minutes until they begin to soften. Add the zucchini and cook for another 2 minutes. Add the cherry tomatoes and garlic, cooking for 1 minute more until fragrant.

Make the sauceReduce heat to medium-low and add the peas to the skillet. Pour in the heavy cream and stir to combine. Let simmer for 2 minutes until slightly thickened. Add the Parmesan cheese and stir until melted and smooth. If the sauce is too thick, add a splash of the reserved pasta water.

Combine pasta and vegetablesAdd the drained pasta to the skillet with the vegetables and sauce. Toss gently to coat evenly. If needed, add more reserved pasta water to reach your desired consistency.

Finish and serveRemove from heat and add the fresh basil, lemon juice, remaining tablespoon of olive oil, salt, pepper, and red pepper flakes if using. Toss again to combine. Serve immediately with additional Parmesan cheese sprinkled on top.
