
Irish Soda Farls
Traditional Irish quick bread with a soft interior

Prepare the dry ingredientsIn a large mixing bowl, sift together the all-purpose flour, baking soda, and salt. If using sugar, add it now and mix well to combine all dry ingredients evenly.

Form the doughMake a well in the center of the dry ingredients and gradually add the buttermilk, stirring with a wooden spoon until the mixture forms a soft dough. The dough should be slightly sticky but manageable.

Shape the farlsTurn the dough onto a floured surface and knead lightly for about 30 seconds. Form into a round about 8 inches in diameter and about 1/2 inch thick. Using a sharp knife, cut the dough into 4 equal triangular pieces (farls).

Cook the farlsHeat a large heavy-bottomed skillet or griddle over medium heat. Add the vegetable oil. Place the farls on the hot surface and cook for about 6-8 minutes on each side until golden brown and cooked through. The farls should sound hollow when tapped on the bottom.

Finish and serveRemove the farls from the pan and brush with melted butter while still hot. Wrap in a clean tea towel to keep warm and soft until ready to serve. These are best enjoyed fresh and warm, split and spread with butter.
