  1. Prepare your ingredients
    Preheat your oven to 350°F (175°C). Grease and line an 8-inch round cake pan with parchment paper. Peel, core, and dice the apples into roughly 1/2-inch pieces.
  2. Mix the dry ingredients
    In a medium bowl, whisk together the flour, baking powder, salt, baking soda, cinnamon, and nutmeg until well combined.
  3. Cream butter and sugar
    In a large bowl, beat the butter and sugar with an electric mixer on medium speed until light and fluffy, about 3-4 minutes. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  4. Combine wet and dry ingredients
    Gradually add the dry ingredients to the butter mixture, alternating with the milk, beginning and ending with the dry ingredients. Mix just until combined, being careful not to overmix.
  5. Fold in the apples
    Gently fold in the diced apples until evenly distributed throughout the batter. The batter will be quite thick, which is normal.
  6. Bake the cake
    Spread the batter evenly into the prepared cake pan and sprinkle the turbinado sugar over the top. Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center comes out clean and the top is golden brown.
  7. Cool and serve
    Allow the cake to cool in the pan for 15 minutes before transferring to a wire rack to cool completely. Serve at room temperature, optionally with a dusting of powdered sugar, whipped cream, or custard sauce.
