  1. Prepare the peanuts
    If using whole peanuts, finely grind them in a food processor until they form a rough paste (not as smooth as peanut butter). If using peanut butter, set aside until needed.
  2. Sauté aromatics
    Heat vegetable oil in a medium saucepan over medium heat. Add minced garlic, chopped shallots, and chilies. Sauté for 2-3 minutes until fragrant and the shallots are translucent.
  3. Add peanuts and seasonings
    Add the ground peanuts or peanut butter to the saucepan. Stir in the tamarind paste, kecap manis, palm sugar, and salt. Cook for 2 minutes, stirring constantly to prevent burning.
  4. Add liquids
    Gradually pour in the coconut milk and water while stirring continuously. Bring the mixture to a gentle simmer and cook for about 5-7 minutes until the sauce thickens slightly.
  5. Adjust consistency and flavor
    If the sauce is too thick, add more water, one tablespoon at a time, until you reach your desired consistency. Taste and adjust seasoning by adding more salt, sugar, or tamarind paste as needed. Stir in fresh lime juice just before removing from heat.
  6. Cool and serve
    Remove from heat and let cool slightly. The sauce will thicken further as it cools. Serve warm or at room temperature with satay, vegetables, or as a dipping sauce.
