  1. Prepare the dry ingredients
    In a large mixing bowl, combine the rye flour, all-purpose flour, baking powder, salt, and caraway seeds if using. Mix thoroughly to ensure even distribution of ingredients.
  2. Create the dough
    Make a well in the center of the dry ingredients. Combine warm water, melted butter, and honey in a separate bowl. Pour the wet mixture into the well and stir with a wooden spoon until the dough comes together.
  3. Knead the dough
    Turn the dough onto a floured surface and knead for about 5 minutes until smooth and elastic. The dough should be firm but pliable. If it's too sticky, add a little more flour.
  4. Roll out the flatbreads
    Divide the dough into 8-10 equal pieces. Roll each piece into a ball, then flatten with your palm. Using a rolling pin, roll each piece into a thin circle about 6-8 inches in diameter and approximately 1/8 inch thick.
  5. Cook the flatbreads
    Heat a large cast iron skillet or griddle over medium heat. Lightly brush with oil. Cook each flatbread for 2-3 minutes on each side until slightly puffed and golden brown with characteristic dark spots.
  6. Keep warm and serve
    As you finish cooking each flatbread, stack them and cover with a clean kitchen towel to keep warm and prevent them from drying out. Serve warm with butter, smoked salmon, or traditional Icelandic toppings.
