  1. Activate the yeast
    In a small bowl, combine warm milk and 1 teaspoon of the sugar. Sprinkle the yeast over the top and let sit for 5-10 minutes until foamy and activated. If the yeast doesn't foam, it may be dead, and you'll need to start over with fresh yeast.
  2. Prepare the dough
    In the bowl of a stand mixer fitted with the dough hook, combine flour, remaining sugar, and salt. Add the activated yeast mixture and 3 eggs. Mix on low speed until combined, then increase to medium-low and knead for about 5 minutes until the dough starts to come together.
  3. Add the butter
    With the mixer running on medium-low, add the softened butter 1 tablespoon at a time, allowing each addition to incorporate before adding the next. This process should take about 5-8 minutes. Once all butter is added, continue kneading for another 5-10 minutes until the dough is smooth, elastic, and pulls away from the sides of the bowl.
  4. First rise
    Transfer the dough to a lightly greased large bowl, cover with plastic wrap or a damp kitchen towel, and let rise in a warm place for 1-2 hours, or until doubled in size. For best flavor development, you can refrigerate the dough overnight at this stage.
  5. Shape the buns
    Turn the dough out onto a lightly floured surface and divide it into 8 equal portions (about 115g each). Shape each portion into a log about 5-6 inches long. Place the shaped buns on a parchment-lined baking sheet, leaving about 2 inches between each bun. Cover loosely with plastic wrap or a kitchen towel.
  6. Second rise
    Let the shaped buns rise for 45-60 minutes in a warm place until puffy and nearly doubled in size. Toward the end of the rising time, preheat your oven to 375°F (190°C).
  7. Prepare and bake
    Whisk together the remaining egg with 1 tablespoon of water to create an egg wash. Gently brush the tops of the buns with the egg wash, being careful not to deflate them. Sprinkle with sesame seeds if using. Bake in the preheated oven for 14-16 minutes, until golden brown and the internal temperature reaches 190°F (88°C).
  8. Cool and serve
    Transfer the buns to a wire rack to cool completely before slicing and using. For the best texture, allow them to cool for at least 30 minutes. Store in an airtight container at room temperature for up to 3 days, or freeze for longer storage.
