  1. Prepare the croissants
    Preheat your oven to 350°F (175°C). Carefully slice the croissants horizontally, as if making a sandwich, but don't cut all the way through. Open them up like a book and set aside.
  2. Add the condiments
    Spread a thin layer of Dijon mustard on the inside of each croissant. If using béchamel sauce, spread a small amount on top of the mustard. The mustard adds tanginess while the béchamel adds creaminess.
  3. Layer the fillings
    Place 2 slices of ham folded neatly inside each croissant, followed by 2 slices of cheese. Sprinkle with fresh thyme leaves if using and add a light seasoning of freshly ground black pepper.
  4. Prepare for baking
    Close the croissants and lightly brush the tops with beaten egg wash to give them a glossy finish when baked. This step is optional but recommended for a professional look.
  5. Bake to perfection
    Place the prepared croissants on a baking sheet lined with parchment paper. Bake in the preheated oven for 15-20 minutes, or until the cheese is completely melted and the croissants are golden and crispy on the outside.
  6. Serve warm
    Remove from the oven and allow to cool for 2-3 minutes. If desired, drizzle a small amount of honey over the top for a sweet contrast to the savory filling. Serve immediately while still warm and the cheese is gooey.
