  1. Prepare the sauce
    In a bowl, mix together dashi stock, soy sauce, mirin, sugar, sake, and grated ginger until sugar is dissolved. Set aside.
  2. Cook the onions
    Heat a large skillet over medium heat. Add the sliced onions and cook for 2-3 minutes until they begin to soften. Pour in half of the prepared sauce and simmer for 5 minutes until onions are translucent.
  3. Add the beef
    Add the thinly sliced beef to the skillet, spreading it out over the onions. Pour the remaining sauce over the beef and bring to a simmer. Cook for 7-10 minutes, or until the beef is cooked through and the sauce has reduced slightly.
  4. Prepare the eggs (optional)
    If using eggs, you can either add them raw on top of the finished dish, or prepare them separately. For a traditional onsen tamago style, poach eggs until whites are set but yolks remain runny.
  5. Assemble the bowls
    Divide the cooked rice among four bowls. Spoon the beef and onion mixture over the rice, making sure to include some of the sauce. If using, place an egg on top of each bowl.
  6. Garnish and serve
    Sprinkle sliced scallions and pickled red ginger over each bowl. Serve immediately while hot. Optional additional toppings include shichimi togarashi (Japanese seven spice) or a drizzle of sesame oil.
