  1. Prepare the yeast mixture
    In a small bowl, combine the warm water with honey and yeast. Stir gently and let it sit for about 10 minutes until frothy and activated.
  2. Make the dough
    In a large mixing bowl, combine the flour and salt. Make a well in the center and pour in the yeast mixture and olive oil. Mix until combined, then turn out onto a floured surface and knead for 8-10 minutes until smooth and elastic.
  3. First rise
    Place the dough in an oiled bowl, cover with a damp cloth or plastic wrap, and let it rise in a warm place for about 1 hour or until doubled in size.
  4. Shape the breadsticks
    Preheat the oven to 400°F (200°C). Punch down the dough and divide it into 4 equal parts. Working with one portion at a time (keep the rest covered), roll it out into a rectangle about ¼-inch thick. Cut into thin strips about ½-inch wide. Roll each strip between your hands to create long, thin breadsticks and place them on parchment-lined baking sheets, leaving space between each.
  5. Add toppings
    Brush the breadsticks lightly with olive oil. Sprinkle with your choice of toppings: sesame seeds, coarse salt, rosemary, or black pepper. Gently press the toppings into the dough to help them adhere.
  6. Bake to perfection
    Bake for 20-25 minutes, rotating the pans halfway through, until the breadsticks are golden brown and crisp. For extra crispness, you can turn off the oven, leave the door slightly ajar, and let them cool in the oven.
