  1. Prepare the vegetables
    Wash and cut all vegetables as directed. Place them in a large bowl and toss with olive oil, salt, and pepper until evenly coated.
  2. Heat the grill
    Preheat your grill to medium-high heat (around 400°F/205°C). If using a grill pan, heat it over medium-high heat until hot.
  3. Grill the vegetables
    Place vegetables on the grill in a single layer, working in batches if necessary. Grill for 3-4 minutes per side, or until they have nice grill marks and are tender but not mushy. Transfer grilled vegetables to a large serving platter.
  4. Make the sesame dressing
    In a small bowl, whisk together toasted sesame oil, rice vinegar, soy sauce, and honey until well combined and the honey is fully dissolved.
  5. Dress and garnish
    Drizzle the sesame dressing over the warm grilled vegetables. Sprinkle with toasted sesame seeds and sliced green onions. Toss gently to coat all vegetables with the dressing.
  6. Serve
    Serve warm or at room temperature as a side dish or light main course. The vegetables can also be chilled and served as a cold salad for picnics or meal prep.
