Prepare the marinadeIn a large bowl, combine soy sauce, brown sugar, sesame oil, rice vinegar, minced garlic, grated Asian pear, ginger, green onions, sesame seeds, black pepper, and red pepper flakes. Whisk until the sugar is completely dissolved and the ingredients are well combined.

Marinate the ribsPlace the flanken ribs in a large, shallow dish or a ziplock bag. Pour the marinade over the ribs, making sure all surfaces are coated. Cover or seal and refrigerate for at least 2 hours, preferably overnight, turning occasionally to ensure even marination.

Prepare the grillPreheat your grill to high heat (approximately 450-500°F). Clean and oil the grill grates to prevent sticking. If using a charcoal grill, prepare for direct grilling with a hot fire.

For medium-rare, aim for an internal temperature of 130-135°F. The thin cut means they'll cook quickly, so watch carefully to avoid overcooking.
