  1. Prepare the herb mixture
    In a small bowl, combine olive oil, lemon juice, minced garlic, chopped parsley, dill, thyme, lemon zest, salt, pepper, and red pepper flakes if using. Mix well to create a vibrant herb topping.
  2. Prepare the fish
    Pat the fish fillets dry with paper towels. Brush both sides lightly with olive oil and season with a pinch of salt and pepper. Let the fish rest at room temperature for 10 minutes.
  3. Preheat the grill
    Preheat your grill to medium-high heat (about 400°F/200°C). Make sure the grates are clean and well-oiled to prevent sticking.
  4. Grill the fish
    Place the fish fillets on the grill, skin-side down if they have skin. Cook for 4-5 minutes until the edges begin to turn opaque. Carefully flip the fillets and cook for another 3-4 minutes until the fish is opaque and flakes easily with a fork.
  5. Add herb topping
    During the last minute of cooking, spoon the herb mixture evenly over each fish fillet, allowing the heat to release the flavors of the herbs and slightly warm the topping.
  6. Serve
    Transfer the grilled fish to serving plates. Spoon any remaining herb mixture over the fillets and garnish with lemon wedges. Serve immediately while hot.
