Prepare the sausagesIn a large pan, heat 1 tablespoon of oil and add the sliced Goan sausages. Sauté for 5-7 minutes until they release their fat and become slightly crispy. Remove and set aside, leaving the flavored oil in the pan.
-
Sauté the aromaticsIn the same pan with the sausage-flavored oil, add the remaining oil. Add cumin seeds, cloves, bay leaves, and cinnamon stick. Let them splutter for 30 seconds. Add sliced onions and sauté until golden brown, about 5-6 minutes.

Add spices and vegetablesAdd the ginger-garlic paste and sauté for a minute until fragrant. Add green chilies, turmeric powder, and garam masala. Mix well. Add chopped tomatoes and cook until they soften and oil begins to separate, about 4-5 minutes.
-
Cook with riceAdd the drained rice to the pan and sauté gently for 2-3 minutes until each grain is coated with the spice mixture. Add the cooked sausage pieces back to the pan and mix well.
-
Add liquid and simmerPour in the water or chicken stock and add salt to taste. Bring to a boil, then reduce heat to low, cover with a tight-fitting lid, and simmer for 15-18 minutes until the rice is cooked and all the liquid is absorbed.
