  1. Prepare the sausages
    In a large pan, heat 1 tablespoon of oil and add the sliced Goan sausages. Sauté for 5-7 minutes until they release their fat and become slightly crispy. Remove and set aside, leaving the flavored oil in the pan.
  2. Sauté the aromatics
    In the same pan with the sausage-flavored oil, add the remaining oil. Add cumin seeds, cloves, bay leaves, and cinnamon stick. Let them splutter for 30 seconds. Add sliced onions and sauté until golden brown, about 5-6 minutes.
  3. Add spices and vegetables
    Add the ginger-garlic paste and sauté for a minute until fragrant. Add green chilies, turmeric powder, and garam masala. Mix well. Add chopped tomatoes and cook until they soften and oil begins to separate, about 4-5 minutes.
  4. Cook with rice
    Add the drained rice to the pan and sauté gently for 2-3 minutes until each grain is coated with the spice mixture. Add the cooked sausage pieces back to the pan and mix well.
  5. Add liquid and simmer
    Pour in the water or chicken stock and add salt to taste. Bring to a boil, then reduce heat to low, cover with a tight-fitting lid, and simmer for 15-18 minutes until the rice is cooked and all the liquid is absorbed.
  6. Rest and fluff
    Once cooked, turn off the heat and let the pulao rest covered for 5-10 minutes. Then gently fluff the rice with a fork to separate the grains and distribute the sausage pieces evenly.
