  1. Prepare the yogurt base
    In a large bowl, whisk together the Greek yogurt, granulated sugar, honey, lemon juice, vanilla extract, and salt until completely smooth and the sugar is dissolved. If the mixture feels grainy, let it rest for 5 minutes and whisk again.
  2. Add thickening agents (optional)
    For a creamier texture, whisk the cornstarch with 2 tablespoons of cold water in a small bowl until smooth. In a small saucepan, heat this mixture over medium heat, stirring constantly until it thickens slightly, about 2 minutes. Cool completely, then whisk into the yogurt mixture.
  3. Add gelatin (optional)
    If using gelatin to prevent ice crystals, sprinkle it over 1/4 cup cold water in a small bowl and let stand for 5 minutes to soften. Heat in the microwave for 15-20 seconds until dissolved, or heat gently in a small saucepan. Let cool slightly, then whisk into the yogurt mixture.
  4. Chill the mixture
    Cover the yogurt mixture and refrigerate for at least 2 hours or overnight. This helps develop flavor and ensures the mixture is thoroughly chilled before freezing.
  5. Freeze the yogurt
    Pour the chilled mixture into an ice cream maker and churn according to manufacturer's instructions, usually 20-25 minutes, until the consistency of soft-serve ice cream. If you don't have an ice cream maker, pour the mixture into a shallow freezer-safe container and freeze for 45 minutes, then stir vigorously with a fork, breaking up any frozen sections. Repeat stirring every 30 minutes for about 2-3 hours.
  6. Harden the frozen yogurt
    Transfer the churned frozen yogurt to an airtight container. Press a piece of plastic wrap directly on the surface to prevent ice crystals. Seal and freeze until firm, about 2 hours or overnight.
  7. Serve and enjoy
    Remove the frozen yogurt from the freezer 5-10 minutes before serving to soften slightly. Scoop into bowls and serve plain or with your favorite toppings like fresh berries, granola, honey, or chopped nuts.
