Instructions

  1. Prepare the eggs
In a large bowl, whisk together the eggs, milk, half of the Parmesan cheese, salt, and pepper until well combined. Set aside.
  2. Sauté the vegetables
Heat the olive oil in a 10-inch oven-safe skillet over medium heat. Add the onions and cook until translucent, about 3 minutes. Add the garlic and cook for 30 seconds until fragrant. Add the bell peppers and zucchini and cook until slightly softened, about 5 minutes.
  3. Combine and start cooking
Pour the egg mixture over the vegetables in the skillet. Scatter the halved cherry tomatoes on top. Cook without stirring until the edges begin to set, about 3-4 minutes.
  4. Finish in the oven
Preheat the broiler. Sprinkle the remaining Parmesan cheese over the top of the frittata. Transfer the skillet to the oven and broil for 3-4 minutes, until the top is golden brown and the eggs are fully set.
  5. Rest and serve
Remove from the oven and let rest for 5 minutes. Sprinkle with fresh basil. Cut into wedges and serve warm or at room temperature.
