A fluffy Italian egg dish perfect for any meal of the day

Prepare the eggsIn a large bowl, whisk together the eggs, milk, half of the Parmesan cheese, salt, and pepper until well combined. Set aside.

Sauté the vegetablesHeat the olive oil in a 10-inch oven-safe skillet over medium heat. Add the onions and cook until translucent, about 3 minutes. Add the garlic and cook for 30 seconds until fragrant. Add the bell peppers and zucchini and cook until slightly softened, about 5 minutes.

Combine and start cookingPour the egg mixture over the vegetables in the skillet. Scatter the halved cherry tomatoes on top. Cook without stirring until the edges begin to set, about 3-4 minutes.

Finish in the ovenPreheat the broiler. Sprinkle the remaining Parmesan cheese over the top of the frittata. Transfer the skillet to the oven and broil for 3-4 minutes, until the top is golden brown and the eggs are fully set.

Rest and serveRemove from the oven and let rest for 5 minutes. Sprinkle with fresh basil. Cut into wedges and serve warm or at room temperature.
