
Fresh Pea and Prosciutto Pasta
Creamy spring pasta with sweet peas and savory prosciutto

Cook the pastaBring a large pot of salted water to a boil. Add the pasta and cook until al dente according to package instructions. Reserve 1 cup of pasta water before draining.

Prepare the peasIf using fresh peas, blanch them in boiling water for 2-3 minutes until tender, then drain and set aside. If using frozen peas, add them to the pasta water during the last 2 minutes of cooking.

Sauté the aromaticsWhile the pasta cooks, heat olive oil in a large skillet over medium heat. Add the shallot and cook until softened, about 3 minutes. Add the garlic and cook for another 30 seconds until fragrant.

Create the sauceAdd the cream to the skillet and bring to a gentle simmer. Stir in the grated Parmesan cheese until melted. Add the lemon juice and butter, stirring until the butter is melted and the sauce is smooth.

Combine everythingAdd the drained pasta and peas to the sauce. Toss to coat, adding a splash of reserved pasta water if needed to loosen the sauce. Stir in most of the prosciutto pieces, saving some for garnish.

Finish and serveRemove from heat and stir in the chopped mint. Season with salt and pepper to taste. Divide among serving plates and top with the reserved prosciutto pieces and additional Parmesan cheese.
