Instructions

  1. Prepare the hot dogs
Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Add the sliced hot dogs and cook until lightly browned on both sides, about 5 minutes. Remove from skillet and set aside.
  2. Sauté the vegetables
In the same skillet, add the remaining tablespoon of oil. Add the diced onion and bell pepper, cooking until softened, about 5 minutes. Add the minced garlic and cook for an additional 30 seconds until fragrant.
  3. Create the sauce
Reduce heat to medium-low. Add the ketchup, brown sugar, molasses, mustard, Worcestershire sauce, smoked paprika, and apple cider vinegar to the skillet. Stir well to combine and let simmer for 2-3 minutes until slightly thickened.
  4. Combine everything
Add the drained and rinsed navy beans to the skillet, stirring gently to coat with the sauce. Return the browned hot dogs to the skillet and fold them into the bean mixture. Season with salt and pepper to taste.
  5. Simmer to perfection
Reduce heat to low, cover the skillet, and simmer for 20-25 minutes, stirring occasionally to prevent sticking. If the mixture becomes too thick, add a splash of water to reach desired consistency.
  6. Final adjustments
Taste and adjust seasonings as needed, adding more brown sugar for sweetness or vinegar for tanginess. Remove from heat and let stand for 5 minutes before serving.
