
Fisherman's Soup
Rich and hearty seafood soup with paprika and fresh herbs

Prepare the baseHeat olive oil in a large pot over medium heat. Add onions and cook for 5-7 minutes until translucent. Add garlic and cook for another minute until fragrant.

Add the seasoningsStir in both sweet and hot Hungarian paprika, stirring constantly for 30 seconds to release the flavors without burning. Add diced tomatoes and bell peppers, cooking for another 3-4 minutes until slightly softened.

Build the brothPour in the fish stock and white wine, then add bay leaves. Bring to a gentle boil, then reduce heat and simmer uncovered for 15 minutes to allow flavors to meld and liquid to reduce slightly.

Cook the seafoodAdd the fish chunks to the simmering broth, cook for 5 minutes, then add the shrimp and cook for another 3-4 minutes until all seafood is just cooked through. Be careful not to overcook the seafood.

Finish the soupStir in the fresh parsley and season with salt and pepper to taste. Remove bay leaves before serving. Allow the soup to rest for 5 minutes off the heat for flavors to fully develop.

Serve hotLadle the soup into warmed bowls, making sure each serving has a good variety of seafood. Garnish with additional fresh parsley and serve with lemon wedges on the side for guests to squeeze over their portions.
