Instructions

  1. Marinate the fish
In a shallow dish, combine the fish pieces with lime juice, cumin, chili powder, garlic powder, salt, and pepper. Let marinate for 10-15 minutes while preparing other components.
  2. Prepare the chipotle crema
In a small bowl, mix the sour cream with chopped chipotle peppers in adobo sauce. Add a pinch of salt and a squeeze of lime juice. Stir well and refrigerate until ready to use.
  3. Make the beer batter
In a medium bowl, whisk together the flour, 1 teaspoon salt, and 1/2 teaspoon pepper. Gradually add the beer while whisking until you have a smooth batter with the consistency of pancake batter.
  4. Fry the fish
Heat 1/2 inch of oil in a large skillet over medium-high heat to 350°F. Dip each piece of fish into the beer batter, allowing excess to drip off, then carefully place in the hot oil. Fry until golden brown and crispy, about 2-3 minutes per side. Transfer to a paper towel-lined plate to drain.
  5. Warm the tortillas
Heat the corn tortillas in a dry skillet or directly over a gas flame for about 30 seconds per side until soft and pliable. Keep warm by wrapping in a clean kitchen towel.
  6. Assemble the tacos
Place a piece or two of fried fish on each warm tortilla. Top with shredded cabbage, a drizzle of chipotle crema, sliced avocado, and fresh cilantro. Serve immediately with lime wedges on the side.
