Make the curry baseHeat oil in a large, deep skillet or Dutch oven over medium heat. Add the chopped onions and sauté for 5 minutes until soft and translucent. Add the minced garlic, grated ginger, and green chilies. Cook for another 2 minutes until fragrant.

Add the spicesStir in the ground turmeric, coriander, and cumin. Cook for 1 minute until the spices become aromatic, being careful not to burn them. Add a splash of water if the mixture becomes too dry.

Create the sauceAdd the diced tomatoes and cook for 3-4 minutes until they start to break down. Pour in the coconut milk and fish stock or water. Stir in the tamarind paste and bring the mixture to a gentle simmer.

Simmer the curryReduce the heat to low and let the curry sauce simmer for 8-10 minutes to allow the flavors to meld together and the sauce to thicken slightly. Adjust salt to taste.

Cook the fishGently place the fish pieces into the simmering curry sauce, ensuring they're mostly submerged. Cover the pan and cook for 5-7 minutes, or until the fish is opaque and flakes easily with a fork. Avoid stirring too much to prevent breaking the fish.

Finish the curryOnce the fish is cooked through, carefully remove the pan from the heat. Let it rest for 5 minutes to allow the flavors to settle and the sauce to thicken slightly.
