  1. Prepare the peas
    Drain the soaked split peas and rinse them thoroughly under cold water. Set aside.
  2. Sauté the base
    In a large heavy-bottomed pot, melt the butter over medium heat. Add the diced onions and carrots, cooking until softened but not browned, about 5-7 minutes.
  3. Add meat and seasonings
    Add the diced ham hock or pork shoulder to the pot and cook for 3-4 minutes. Stir in the marjoram, ground mustard, cloves, and bay leaves, cooking until fragrant.
  4. Cook the soup
    Add the drained peas to the pot along with the stock. Bring to a boil, then reduce heat to low and simmer, partially covered, for about 2 hours or until peas are completely tender and beginning to break down.
  5. Check consistency
    Stir occasionally and add more water if needed to maintain desired consistency. The traditional Finnish pea soup should be thick but still spoonable. If it's too thick, add more stock; if too thin, simmer uncovered to reduce.
  6. Season and serve
    Remove bay leaves. Season with salt and pepper to taste. Serve hot in bowls with a dollop of mustard on the side, as is traditional in Finland.
