
Finnish Cardamom Rolls
Sweet, aromatic spiral buns with a hint of cardamom

Prepare the doughIn a large bowl, combine the warm milk and yeast. Let stand for 5 minutes until foamy. Add sugar, cardamom, salt, eggs, and melted butter. Stir to combine. Gradually add flour, one cup at a time, until a soft dough forms that pulls away from the sides of the bowl but is still slightly sticky to the touch.

Knead the doughTurn the dough onto a floured surface and knead for 8-10 minutes until smooth and elastic. Place in a greased bowl, cover with a clean kitchen towel, and let rise in a warm place for about 1 hour, or until doubled in size.

Prepare the fillingWhile the dough is rising, mix together the softened butter, sugar, cinnamon, and cardamom for the filling until it forms a smooth paste. Set aside at room temperature.

Shape the rollsPunch down the risen dough and divide it in half. On a lightly floured surface, roll each half into a rectangle approximately 12×16 inches (30×40 cm). Spread half of the filling evenly over each rectangle. Starting from the long edge, roll the dough tightly into a log. Cut each log into 6-8 pieces, about 1.5-2 inches (4-5 cm) wide.

Second risePlace the rolls on parchment-lined baking sheets, leaving space between them. Press down slightly on the center of each roll with your finger to create the traditional indentation. Cover with towels and let rise for another 30-45 minutes until puffy.

Bake the rollsPreheat oven to 375°F (190°C). Brush the rolls with beaten egg and sprinkle with pearl sugar. Bake for 12-15 minutes, until golden brown. Transfer to a wire rack to cool slightly before serving.
