  1. Toast the bread
    Preheat your oven to 375°F (190°C). Brush both sides of each bread slice with olive oil and place on a baking sheet. Toast in the oven for 4-5 minutes until golden and crisp around the edges but still slightly soft in the center.
  2. Prepare the honey mascarpone
    In a small bowl, mix the mascarpone cheese with 2 tablespoons of honey until smooth and well combined. Set aside at room temperature to maintain a spreadable consistency.
  3. Assemble the tartines
    Spread a generous layer of the honey mascarpone mixture on each piece of toasted bread. Arrange fig slices on top, slightly overlapping. Gently tear or fold the prosciutto slices and drape over the figs.
  4. Add the finishing touches
    Sprinkle the tartines with chopped walnuts and fresh thyme leaves. Drizzle with balsamic glaze and a little extra honey. Finish with a light sprinkle of flaky sea salt and freshly ground black pepper.
  5. Serve
    Transfer the tartines to a serving platter or individual plates. Serve immediately while the bread is still slightly warm and the contrast between the warm bread and cool toppings is at its best.
