  1. Prepare the mirepoix
    Heat vegetable oil in a saucepan over medium heat. Add the diced carrots, onions, and celery, cooking until they begin to soften and caramelize slightly, about 8-10 minutes. Set aside.
  2. Make the roux
    In a large, heavy-bottomed saucepan, melt the butter over medium heat. Add the flour and cook, stirring constantly with a wooden spoon, until the mixture turns a medium brown color and smells nutty, about 6-8 minutes. This is your brown roux.
  3. Add liquids
    Gradually whisk in the warm brown stock, ensuring no lumps form. Add the tomato purée, the cooked mirepoix, and bouquet garni. Bring to a gentle simmer.
  4. Simmer the sauce
    Reduce heat to low and simmer the sauce, uncovered, for about 45-60 minutes, occasionally skimming any impurities that rise to the surface. The sauce should reduce by about one-third and coat the back of a spoon.
  5. Deglaze and enhance
    In a separate small pan, sauté the shallots until translucent. Add the red wine and reduce by half. Stir this mixture into the main sauce for added depth of flavor.
  6. Strain and finish
    Remove the bouquet garni. Strain the sauce through a fine-mesh sieve, pressing gently on the solids to extract maximum flavor. Return to a clean pan and season with salt and pepper to taste. Keep warm until ready to serve.
