
Earl Grey Tea Affogato

Prepare the gelatoRemove the gelato from the freezer and let it soften slightly for about 5 minutes. Scoop one generous scoop into each of four chilled serving glasses or bowls.

Brew the Earl Grey teaHeat water to 200°F/93°C (just below boiling). Place the Earl Grey tea bags and dried lavender (if using) in a teapot or heat-resistant container. Pour the hot water over the tea bags and let steep for 4-5 minutes until the tea is strong and fragrant. Remove the tea bags, pressing gently to extract the flavor.

Sweeten and infuse the teaIf desired, stir in honey or simple syrup while the tea is still hot. Add the orange zest and let it infuse for an additional minute to enhance the bergamot flavor of the Earl Grey tea.

Assemble the affogatoPlace a scoop of vanilla gelato in each serving glass. Pour about 1/2 cup of the hot Earl Grey tea over each scoop. The tea should partially melt the gelato, creating a creamy mixture at the bottom.

Garnish and serveImmediately garnish each affogato with crushed pistachios, a sprig of mint, and a lemon slice on the rim of the glass. Serve with two small shortbread cookies or biscotti on the side. Serve immediately while the contrast between hot tea and cold gelato is at its peak.
