  1. Prepare the corn
    Stand each ear of corn vertically on a cutting board and carefully cut down the center with a sharp knife, splitting it in half. Place each half flat-side down and cut down the middle again to create quarters. Each ear will yield 4 'ribs'.
  2. Season the corn
    In a large bowl, combine olive oil, smoked paprika, chili powder, garlic powder, cumin, and cayenne (if using). Add the corn rib pieces and toss until evenly coated with the spice mixture.
  3. Cook the corn ribs
    Preheat your oven to 400°F (200°C). Arrange the corn ribs on a baking sheet, cut side down. Bake for 20-25 minutes, or until the edges begin to caramelize and the corn curls up slightly, resembling ribs. Alternatively, grill over medium-high heat for 8-10 minutes, turning occasionally.
  4. Prepare the sauce
    While the corn is cooking, mix together the mayonnaise and sour cream in a small bowl. Set aside.
  5. Assemble and garnish
    Transfer the hot corn ribs to a serving plate. Drizzle with the mayo-sour cream mixture, then sprinkle generously with cotija cheese and chopped cilantro. Serve immediately with lime wedges on the side for squeezing over the corn.
