Chilled tomato-based clear soup with Spanish flair

Prepare the clarification mixtureIn a large bowl, combine the ground beef, egg whites, diced carrots, celery, onion, garlic, tomato paste, and half of the chopped tomatoes. Mix well until all ingredients are thoroughly incorporated.

Start the consomméPour the beef stock into a large stockpot and add the clarification mixture, remaining tomatoes, paprika, bay leaves, and a pinch of salt. Stir gently to combine all ingredients.

Simmer and clarifyPlace the pot over medium heat and bring it to a simmer (do not boil). As the mixture heats, the proteins will form a 'raft' on the surface. Once this happens, reduce heat to low and maintain a gentle simmer for 2 hours, occasionally making a small hole in the raft to check the clarity of the liquid beneath.

Strain the consomméCarefully ladle the liquid through a fine-mesh strainer lined with cheesecloth into another pot, being careful not to disturb the raft too much. The resulting liquid should be crystal clear with a beautiful reddish-amber color.

Season and coolAdd the lemon juice to the strained consommé and adjust seasoning with salt and pepper. Allow to cool to room temperature, then refrigerate until thoroughly chilled, at least 4 hours or overnight.

Serve the MadrilèneBefore serving, taste and adjust seasoning if necessary. Ladle the chilled consommé into cold soup bowls or cups. Garnish with finely chopped fresh herbs and serve immediately.
