  1. Prepare the clarification mixture
    In a large bowl, combine the ground beef with the egg whites, roughly chopped carrot, celery, leek, and tomato paste. Mix thoroughly until well combined. This mixture will act as a 'raft' to clarify the broth.
  2. Begin the clarification process
    In a large stockpot, combine the beef stock, clarification mixture, bouquet garni, and peppercorns. Stir well to incorporate everything. Gradually bring to a simmer over medium-low heat, stirring occasionally to prevent the mixture from sticking to the bottom.
  3. Create and maintain the raft
    As the mixture heats, the proteins will begin to coagulate and rise to the surface, forming a 'raft'. Once this happens, stop stirring. Make a small hole in the center of the raft to allow steam to escape. Reduce heat to low and simmer very gently for 1 hour 30 minutes. The raft should remain intact throughout cooking.
  4. Prepare the brunoise vegetables
    While the consommé clarifies, prepare the brunoise vegetables. Dice the reserved carrot, celery, leek, and turnip into precise 3mm cubes. Keep them separate as they'll be cooked at different times based on their density.
  5. Cook the brunoise vegetables
    Bring a small pot of salted water to a boil. Cook the diced carrots and turnips for 2-3 minutes, then add the celery and leek and cook for 1 minute more. Immediately drain and refresh in ice water to stop the cooking process and preserve their bright colors. Drain well and set aside.
  6. Strain the consommé
    When the consommé has finished simmering, carefully ladle it through a fine-mesh strainer lined with dampened cheesecloth. Avoid pressing or disturbing the raft, as this will cloud the consommé. Strain the consommé twice if necessary to achieve perfect clarity.
  7. Season and finish the consommé
    Gently reheat the strained consommé to serving temperature. Season with salt to taste. Just before serving, add the cooked brunoise vegetables to warm through. The consommé should be crystal clear with vibrant, perfectly cut vegetables suspended in the broth.
  8. Serve the consommé
    Ladle the hot consommé into warmed soup bowls, ensuring each serving contains an equal portion of the brunoise vegetables. Garnish with a sprinkle of fresh chervil. Serve immediately while hot.
