  1. Prepare the pork
    Season the pork cubes with salt and pepper. Heat the vegetable oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Working in batches, brown the pork on all sides, about 3-4 minutes per batch. Transfer the browned pork to a plate.
  2. Sauté the aromatics
    In the same pot, add the diced onion and cook until softened, about 5 minutes. Add the minced garlic and jalapeño (if using) and cook for another 30 seconds until fragrant.
  3. Create the base
    Sprinkle the flour over the onion mixture and stir continuously for 2 minutes to cook out the raw flour taste. Gradually whisk in the chicken broth, making sure to scrape up any browned bits from the bottom of the pot.
  4. Add ingredients and simmer
    Return the browned pork to the pot. Add the roasted chopped green chiles, poblanos, diced tomatoes, cumin, and oregano. Stir well to combine. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 2 hours, stirring occasionally.
  5. Check consistency
    After 2 hours, check the chili's consistency. If it's too thin, simmer uncovered for an additional 15-30 minutes to reduce and thicken. If it's too thick, add a little more chicken broth.
  6. Final seasoning
    Taste and adjust seasoning with additional salt and pepper as needed. The pork should be very tender and easily shred when pressed with a fork.
