
Coconut Milk Thai Tea

Brew the teaIn a medium saucepan, bring 4 cups of water to a boil. Add the Thai tea bags or loose tea (in a tea infuser), star anise, cardamom pods, and cinnamon stick. Reduce heat and simmer for 3-5 minutes. Remove from heat and let steep for another 5 minutes.

Sweeten the teaWhile the tea is still hot, add the sugar and stir until completely dissolved. Allow the tea to cool to room temperature, then strain to remove the tea leaves and spices.

Prepare the coconut mixtureIn a bowl, whisk the coconut milk until smooth. If using, add the vanilla extract and mix well. Set aside about 1/4 cup of coconut milk for topping.

Combine tea and coconut milkStir the remaining coconut milk into the cooled tea mixture until well combined. Taste and adjust sweetness if needed.

Chill the teaRefrigerate the tea mixture for at least 30 minutes until cold, or overnight for best flavor development.

Serve the teaFill tall glasses with ice cubes. Pour the chilled tea mixture over the ice, leaving about 1 inch of space at the top. Gently pour the reserved coconut milk over the top to create a layered effect.

Garnish and enjoyIf desired, garnish with fresh mint leaves and a sprinkle of toasted coconut flakes. Serve with a straw and stir before drinking to mix the layers.
