  1. Prepare the chorizo
    Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the sliced chorizo and cook for about 5 minutes, turning occasionally, until lightly browned on both sides. The chorizo will release some of its own oil and begin to crisp at the edges.
  2. Sauté the aromatics
    Remove the chorizo with a slotted spoon and set aside. In the same skillet, add the remaining tablespoon of olive oil if needed. Add the diced onion and sauté for 3-4 minutes until softened. Add the minced garlic and continue cooking for another minute until fragrant.
  3. Add the wine and seasonings
    Return the chorizo to the skillet. Pour in the red wine and add the bay leaf, smoked paprika, dried oregano, and black pepper. Stir well to combine all ingredients and scrape up any browned bits from the bottom of the pan.
  4. Simmer the mixture
    Bring the mixture to a gentle boil, then reduce heat to low. Add the honey or brown sugar and stir to incorporate. Simmer uncovered for 15-20 minutes, or until the wine has reduced by about half and created a glossy sauce that lightly coats the chorizo.
  5. Serve the dish
    Remove the bay leaf. Transfer the chorizo and sauce to a serving dish. Sprinkle with freshly chopped parsley. Serve hot with plenty of crusty bread to soak up the delicious wine sauce.
