
Chinese Eight Treasure Rice Pudding
Sweet glutinous rice dessert with colorful fruits and nuts

Prepare the riceAfter soaking the glutinous rice overnight, drain well. Mix the rice with 1 tablespoon of vegetable oil and the sugar. Set aside for 15 minutes to allow the flavors to meld.

Prepare the moldLightly oil a 7-inch round heat-proof bowl or specialized eight treasure rice pudding mold. Arrange a decorative pattern on the bottom using various fruits and nuts, pressing them gently against the sides and bottom of the bowl.

Layer the riceCarefully add about two-thirds of the rice mixture over the fruit and nut decoration, pressing down gently to compact it. Use a wet spoon to create a well in the center of the rice.

Add the fillingSpoon the red bean paste into the well, then cover with the remaining rice. Press down firmly to ensure there are no air pockets. Smooth the top surface with a wet spoon.

Steam the puddingCover the bowl with aluminum foil. Place in a steamer over boiling water and steam for about 45 minutes, or until the rice is completely cooked through and has a sticky, pudding-like consistency.

Glaze and unmoldOnce cooked, remove from the steamer and let rest for 5 minutes. Carefully run a knife around the edge of the bowl. Place a serving plate on top of the bowl and quickly flip it over to unmold the pudding. Brush the surface with honey mixed with a little hot water for a glossy finish.

ServeAllow the pudding to cool slightly before serving. It can be enjoyed warm or at room temperature. If desired, sprinkle with a few additional nuts or dried fruits as garnish.
