  1. Prepare the chicken
    Rinse the chicken pieces and pat dry with paper towels. Season lightly with salt and pepper. Heat oil in a large pot over medium-high heat and brown the chicken pieces on all sides, about 5-7 minutes. Remove and set aside.
  2. Create the soup base
    In the same pot, add onions, garlic, and tomatoes. Sauté for 2-3 minutes until fragrant and the tomatoes start to soften. Return chicken to the pot and add fish sauce. Stir to combine.
  3. Add liquids and root vegetables
    Pour in water or chicken broth and bring to a boil. Add the sinigang mix or tamarind paste, stirring until completely dissolved. Add the daikon radish and taro roots. Reduce heat and simmer for 20-25 minutes or until chicken is tender and root vegetables are cooked through.
  4. Add remaining vegetables
    Add string beans and cook for 3-4 minutes. Then add spinach or water spinach and green chili peppers (if using). Cook for another 1-2 minutes until greens are just wilted but still bright green.
  5. Adjust seasoning
    Taste the soup and adjust the sourness by adding more sinigang mix or tamarind paste if desired. Season with additional fish sauce or salt as needed. The soup should have a pleasant tangy flavor that's balanced with savory notes.
  6. Serve hot
    Remove from heat and ladle into serving bowls. Ensure each serving has a good portion of chicken, vegetables, and broth. Serve immediately with steamed rice on the side.
