
Chicken Parmigiana
Crispy breaded chicken topped with marinara and melted cheese

Prepare the chickenPlace the chicken breasts between two sheets of plastic wrap and pound to an even 1/2-inch thickness using a meat mallet. Season both sides with 1/2 teaspoon salt and pepper.

Set up the breading stationPrepare three shallow dishes: one with flour seasoned with remaining 1/2 teaspoon salt, one with beaten eggs, and one with breadcrumbs mixed with 1/2 cup of the Parmesan cheese. Dredge each chicken breast in flour, then dip in egg, and finally coat with the breadcrumb mixture, pressing gently to adhere.

Fry the chickenHeat vegetable oil in a large skillet over medium-high heat. Working in batches if necessary, cook the breaded chicken for 4-5 minutes per side until golden brown and cooked through (internal temperature of 165°F). Transfer to a paper towel-lined plate to drain excess oil.

Assemble and bakePreheat oven to 425°F. Spread 1/2 cup of marinara sauce in the bottom of a 9x13-inch baking dish. Arrange the fried chicken breasts on top, then spoon remaining marinara sauce over each piece. Layer mozzarella slices on top of each chicken breast, then sprinkle with remaining Parmesan cheese, dried oregano, and chopped basil.

Bake until bubblyBake in the preheated oven for 15-20 minutes until the cheese is melted and bubbly, and slightly golden on top. Allow to rest for 5 minutes before serving. Garnish with additional fresh basil leaves.
