
Chicken Limone
Tender chicken in a bright, zesty lemon sauce

Prepare the chickenPlace the chicken breasts between sheets of plastic wrap and pound to an even thickness of about 1/4 inch. Mix the flour, salt, and pepper in a shallow dish. Dredge each chicken breast in the flour mixture, shaking off any excess.

Cook the chickenHeat the olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Once hot, add the chicken and cook until golden brown, about 3-4 minutes per side. Transfer the chicken to a plate and cover loosely with foil to keep warm.

Make the lemon sauceIn the same skillet, reduce heat to medium and add the minced garlic. Cook for 30 seconds until fragrant. Add the white wine and use a wooden spoon to scrape up any browned bits from the bottom of the pan. Simmer until the wine is reduced by half, about 3 minutes.

Finish the sauceAdd the chicken broth, lemon juice, and lemon zest to the skillet. Bring to a simmer and cook for 2-3 minutes to reduce slightly. Stir in the capers.

Return chicken to the sauceReturn the chicken to the skillet and simmer gently for 2-3 minutes to warm through and allow the flavors to meld. Spoon the sauce over the chicken as it cooks.

Final touchesSwirl in the remaining tablespoon of butter to enrich and thicken the sauce. Sprinkle with fresh parsley and give everything a gentle stir to incorporate.

ServeTransfer the chicken to serving plates. Spoon the lemon sauce over the top and garnish with lemon slices. Serve immediately, preferably with pasta, rice, or roasted potatoes to soak up the delicious sauce.
