
Chicken Feet Soup
A nourishing, collagen-rich broth with tender chicken feet

Prepare the chicken feetClean the chicken feet thoroughly by trimming off the nails and removing any calluses. Blanch them in boiling water for 2-3 minutes, then drain and rinse with cold water to remove any impurities.

Sauté the aromaticsIn a large stockpot, heat the vegetable oil over medium heat. Add the onions, carrots, celery, garlic, and ginger. Sauté for 5-7 minutes until the vegetables start to soften and become fragrant.

Add the chicken feet and spicesAdd the blanched chicken feet to the pot along with the star anise and black peppercorns. Pour in the chicken stock or water, making sure the feet are completely submerged. Bring to a boil, then reduce heat to a gentle simmer.

Simmer the soupCover the pot and let the soup simmer for about 1 hour 15 minutes, or until the chicken feet are very tender and the broth has become rich and flavorful. Occasionally skim off any foam that rises to the surface.

Season the soupAdd soy sauce and rice wine vinegar to the soup. Taste and adjust seasoning with salt and pepper as needed. Continue to simmer for another 10 minutes to allow the flavors to meld together.

Strain and serveStrain the soup through a fine-mesh sieve, reserving the chicken feet and discarding the vegetables and spices. Return the broth and chicken feet to the pot and heat through if needed.

Garnish and presentLadle the hot soup with a few chicken feet into serving bowls. Garnish with fresh cilantro and sliced green onions. Serve immediately with small plates for the chicken feet bones.
