Prepare the spice pasteIn a food processor, blend all the spice paste ingredients until smooth, adding a little water if necessary to help with the blending process. This should take about 3-5 minutes until you have a smooth, aromatic paste.

Brown the chickenHeat 2 tablespoons of oil in a large, heavy-bottomed pot over medium-high heat. Add the chicken pieces and brown on all sides, about 6-8 minutes. Remove the chicken and set aside.

Cook the spice pasteIn the same pot, add the remaining oil and the spice paste. Reduce heat to medium and cook, stirring constantly to prevent burning, until the paste darkens and becomes fragrant, and the oil separates from the paste, about 10-15 minutes.

Add liquid ingredientsReturn the chicken to the pot and stir to coat with the spice paste. Add the tamarind liquid, coconut milk, fish sauce, and palm sugar. Stir well to combine all ingredients and bring to a gentle simmer.

Simmer the curryReduce heat to low, cover partially, and simmer for 25-30 minutes, or until the chicken is completely cooked through and tender. Stir occasionally to prevent sticking and ensure even cooking.

Finish the dishOnce the chicken is cooked, stir in the kaffir lime leaves and lime juice. Taste and adjust seasoning with more fish sauce or palm sugar if needed. The curry should have a balance of spicy, sour, salty, and slightly sweet flavors.

Serve the curryLet the curry rest for 5 minutes before serving. This allows the flavors to meld together. Serve hot with steamed jasmine rice or coconut rice, and garnish with additional lime leaves or fresh cilantro if desired.
