  1. Prepare the custard mixture
    In a medium bowl, gently beat the eggs, being careful not to create too many bubbles. Gradually add the dashi stock, light soy sauce, mirin, sake, and salt. Whisk gently until well combined. Strain the mixture through a fine-mesh sieve to remove any egg particles for a silky smooth texture.
  2. Prepare the cups
    Divide the seafood (shrimp and scallops), sliced shiitake mushrooms, and kamaboko evenly among four heat-resistant cups or ramekins. If using ginkgo nuts, add one to each cup.
  3. Add the custard
    Gently pour the strained egg mixture into each cup, being careful not to disturb the arranged ingredients. Cover each cup with aluminum foil or a lid to prevent condensation from dripping onto the custard surface.
  4. Steam the custard
    Prepare a steamer by bringing water to a simmer. Place the cups in the steamer, cover with a lid, and steam on low heat for about 12-15 minutes. The custard is done when it's set but still jiggles slightly when shaken. Do not overcook as the custard will become tough.
  5. Check for doneness
    Insert a skewer or toothpick into the center of the custard. If it comes out clean without any raw egg mixture, the custard is done. The texture should be silky and soft, similar to tofu.
  6. Serve
    Remove the cups from the steamer and let them cool slightly. Garnish each cup with a sprig of mitsuba or cilantro. Serve warm as an appetizer or side dish.
